Top 3 Easy Healthy Breakfast Ideas

I’m a bit of a cereal addict – actually, I’m a total addict! I have been known to eat cereal for breakfast, lunch and dinner – it’s not just my love of the Crunchy Nut that feeds my dependence, it has also become the all too easy option. I’m clearly not alone as 92% of consumers have eaten cereal in the last six months! However, with a young family to feed and being the only vegetarian in the house, I haven’t always taken enough care over my meals. Would I let my children eat this way? Absolutely not!

I have recently been trying to make some changes and breakfast has been one of my most successful transformations. I’m not a professional, I’ve just been putting some trial and error to good use and I’m sharing my top 3 easy healthy breakfast ideas.

Three recipes might not seem like much but if you’re anything like me you A. don’t have the time and/or energy to think about your breakfast options and B. you don’t want to spend a lot of extra money on the ingredients required to have something different every day!

  • Smoothie + toast – I’ve become a bit of a ‘born again’ smoothie devote! I like the virtuous feeling I get knowing I’ve topped up all my vitamins and nutrients so early in the day! The only downside of smoothies is the prep time and cost of ingredients.  I get round this by keeping my ingredients to the minimum and freezing them in batches so I don’t have any excuses! It literally takes 5 mins even prepping from scratch:
  • Large handful of spinach, kale – or both!
  • 3 celery sticks sliced.
  • Large handful of raspberries or strawberries
  • Freshly boiled water (with a bit of lemon if you have it)
  • Extras: generous sprinkling of Chia seeds
  • Combine and blend! No need for a fancy blender, I’ve been using a fairly old Kenwood and it does the job!

The smoothie should be enough nutrients wise but if I don’t have some toast I find I do get hungry by the time I’ve done the school run! Having said that we are up at 5am with my youngest at the moment, having the smoothie by 6am, so it’s probably no wonder I need the toast top up by 8am!

  •  Scrambled eggs, spinach, cheese and wholemeal pitta –  being a vegetarian my protein levels can be a bit shaky if I’m not careful. I used to think making anything egg related was way beyond me in the morning but when I started making these improvements I realised that was kind of silly – I’m not ashamed to say I use the microwave, the key is to use 30 second intervals and stir (on an early attempt I did not do this and ended up with what resembled an insole!)
  • Combine 2 medium eggs, skimmed milk and a tiny bit of butter in a microwavable dish. Microwave for 30 seconds.
  • Chop spinach, grate cheese.
  • Combine all ingredients and microwave for another two sets of 30 seconds, stirring inbetween.
  • Stuff pittas and enjoy!
  • This genuinely doesn’t take long and is obviously very easy to adapt with different ingredient combinations and for more people; plus it feels like a proper meal for when you’re really hungry!

 

Raspberries Dessert

  • Red fruit parfaits – I have a really sweet tooth – hence the Crunchy Nut issues, so this really suits me, it’s basically a healthy pudding masquerading as breakfast! It also couldn’t be easier to make, my girls like to make their own as it really is just a case of combining ingredients.
  • Shop bought (or homemade if you’re that good!) muesli cereal.
  • A handful of red fruit – we like chopped strawberries or raspberries.
  • Low fat vanilla yoghurt (Greek style yoghurt also works)
  • Now combine! Any sort of glass will do, we have some little dessert style ones but I have been known to use a drink tumbler and I use a plastic drink cup for my youngest! Start with a little muesli at the bottom, then yoghurt, fruit and repeat. My eldest actually insists on having each layer separate so it really is up to you!

I still can’t believe that I thought making cereal day after day was the only thing I had time to make! That isn’t to say we don’t have cereal in the house, I still love a bowl of Crunchy Nut but now it’s for a supper time treat rather than my main food source!!

    I love parfaits. They are so yummy yours looks delicious. Breakfast is supposedly the most important meal of the day but I tend to not even bother with cereal because of time sad but true. My coffee comes first and then maybe a slice of toast. But I love your tips here for a healthier start to the day. Thanks for linking up to Share With Me #sharewithme

      They really are lovely and super easy! I’m a bit of a breakfast fiend and have to eat within about 5 minutes of waking up or I just can’t cope – it all falls apart a bit as the day goes on but I’m always there for breakfast! Thanks for hosting such a lovely linky! Xx

      Cereal was always my main breakfast (lunch and dinner sometimes too!). Making healthier choices doesn’t come naturally to me but I do feel the benefit when I make the effort! Thanks for reading. Xx
